Mushroom Barley Soup

This is very easy to  throw together and smells great simmering on the stove.

The ingredients to this hearty soup are barley, mushroom, carrot, celeriac, parsley, arugula, onion and virtually any other vegetable you like. Rinse the barley well. I used about a cup of barley. Saute the diced up mushrooms (I used only one because this mushroom was so giant!) and all the other vegetables until the onion is translucent. I used olive oil, but you could use butter if you prefer. Add the barley along with 2-3 cups of water or vegetable broth. Remember that barley thickens as it cooks and continues to absorb the fluid even after cooked so start with a few cups,  then add as you go along. Bring it up to a boil and then reduce heat and semi-cover the pot with a lid. Stir from time to time and add more fluid as needed. Salt and pepper to taste. Enjoy!
