CSA 2013: week 15




This week's share includes:
bunch of beets
eggplant
red peppers
onions
eggs (biweekly)
kale
carrots
hot peppers
sweet dumpling squash
string beans
lettuce mix
scarlet queen salad turnips

Fall is official but that doesn't signal any lack of abundance in our shares this week. Stretch the abundance by using every last bit of your vegetables. When I have root vegetables with attached greens, I trim them right above the bulb and then store them in a separate bag. Be sure to rinse well before using to remove any earth particles. Not only are beet and turnip greens edible but the stems are as well. I like to give them some additional time to cook so I roast them in the oven with onion slices for about 20 minutes and then add the greens in and cook another 10. You can also easily adapt this method to the stovetop.
