CSA Week 9



















Q: What round and hefty treat is included in your share this week? 
A: Watermelon! Slice it up and enjoy this classic summer fruit. Or try one of these ideas for something a little different.

• Blend frozen or chilled cubes of watermelon in a blender and add sparkling water to make a spritzer. Cucumber would be a welcome addition to this drink as well. Also, try adding mint, honey and lemon or lime juice.

• Toss cubes of watermelon with tomatoes, cucumber, fresh herbs, lemon juice and salt + pepper for a sweet and savory salad. Feta or goat cheese completes this salad perfectly.

• Make watermelon rind pickles. This unique pickle is an old-fashioned way of using the whole melon.

Here is a simple recipe I found on a food blog. 

You'll need the rind of one small/medium watermelon. Trim the green skin so only white remains and cut into pieces.

Brine Ingredients:
1 cup water
1 cup rice vinegar
3/4 cup sugar

Heat all three in a saucepan, stirring until the sugar is dissolved, add the watermelon rind pieces, turn off the stove burner, and let the rind sit in the brine until it comes to room temperature (about an hour). Once cooled, transfer rind and brine to a jar and store in the fridge 2-3 weeks.

This week's CSA harvest also includes:

Eggplant
Peppers 
Slicing Cukes
Zucchini and Pattypan Squash
Yellow and Red Onions
Hot Peppers
Tomatoes and Sungold Cherry Tomatoes
Red Leaf Lettuce
Beets

A great and easy way to use your CSA bounty of tomatoes is to make Salsa Fresca. Chop tomatoes and toss with diced onion and hot peppers. Season with salt and lime juice. Add diced garlic if you're feeling up to it. Eat with tortilla chips. Here is a photo of the friday crew enjoying some Salsa Fresca after a day of harvesting and washing.
